Does anyone have any recipe or method for say a breakfast casserole that can be made in a big roaster? Or some similar suggestion that can be easily made for 50 to 75 people? I'd prefer to do it in my roaster since there won't be much time for cleanup and I'd be self-contained.

I always get raves about this recipe, and I don't see why it couldn't be made in a roaster: Corned Beef Hash Casserole 10 oz. pk. shredded hash browns 1/4 cup chopped onions 9-10 eggs 1/4 cup diced green pepper 8 oz. shredded cheese (any kind will do) 1/2 pint whipping cream 1 can corned beef hash Place hash browns in the bottom of a greased 9x13x2 baking dish. Add chopped onions and green peppers. Season with salt and pepper as desired. Break in eggs, break yolks but do not scramble. Pour on whipping cream. Add ½ of cheese, then add hash, and cover with the remainder of cheese. Cover with foil and refrigerate overnight. Preheat oven to 350 degrees and bake for 1 hour.

You can also substitute other breakfast meats for the corned beef hash.

And here's one more that always gets good reviews at potlucks: Best Brunch Bake 1 C Uncooked Rice 1 C Chicken Broth Parmesan Cheese 1 Stick Melted Butter 1 Pound Cottage Cheese ½ pound ricotta cheese 1 C Summer Sausage (bite size pieces) 1 Package Frozen Spinach (drained well) 1 Package Knorr Vegetable Soup Mix 1 t Onion Salt 1 t Garlic Salt Pepper 12 Eggs Grated Cheese Cook rice per package directions substituting 1 c chicken broth for 1 of the cups of water. Grease 9 X 13 baking dish and sprinkle bottom with parmesan cheese. Mix rest with 9 beaten eggs (reserving 3). Pour into dish and pour 3 beaten eggs over top. Bake at 350 for about 45 minutes. I put some grated cheddar and mozzarella on top for the last 10 minutes of baking.

Manda. What DO y'all eat for breakfast? I'd love to visit the British Isles someday and I'm curious about ordinary things like that. I don't so much have a recipe, but a resource. THIS is a bed and breakfast site that has a recipe section. I'm sure you could find something on there intended for a crowd and then multiply it for your roaster. A casserole, some fresh fruit, milk and coffee and you're set to feed a crowd.

6 eggs 1 pound sausage 1 cup cheddar cheese, grated 2 cups milk 1/2 teaspoon salt 1/2 teaspoon mustard 6-8 cups stale bread Spray a 9X13 inch pan with Pam. Cut up stale bread in squares and cover bottom of pan. Brown sausage until crumbly. Sprinkle sausage over bread. Sprinkle cheese over sausage. Beat eggs, milk and salt ( could add some chives and thyme also). Pour over sausage and cheese, cover and place in refrigerator over night. Next morning bake at 350 degrees for 30 minutes. Serves 6-8 I have made this, I do add the chives. I have tripled it for a ladies brunch, it turned out fine. I did have to cook a little longer, but not sure how much longer...just til eggs are set. Also, a great side it to take Kielbasa sausage, spread lightly with spicy mustard, wrap in puff pastry tightly, and bake as directed on puff pastry package. When done, slice into bite sized circles...these are a huge hit!!!!

My favorite breakfast lately is to take a couple of leftover baked potatoes that I've had in the fridge at least overnight, and cut them into chunks. Throw them in a skillet with some chopped onion and a little olive oil and let them brown and heat through. Add some crumbled bacon and put a nice portion in a bowl. Top with a little shredded cheese and a fried egg (over easy). Mmmmm.
