This recipe is from Aunt Bee's Mayberry Cookbook. I've made it several times, and it's a winner. The most time-consuming and messy part is chopping the broccoli. Bannertown Broccoli Salad 3/4 cup mayonnaise (I like to use light) 3 tablespoons sugar 3 tablespoons red wine vinegar (I usually substitute white) 2 bunches broccoli, chopped 8 strips bacon, cooked and crumbled (I like to use the kind that comes already cooked and packaged in a glass jar - it's more convenient and much lower in fat) 1 cup shredded cheddar cheese 1 red onion, chopped In a small bowl, combine the mayonnaise, sugar and vinegar. Chill the dressing for at least one hour before serving. In a salad bowl, layer the broccoli, bacon, cheese, and onion. Pour the dressing over the salad, and toss before serving. Serves 6.

ANy tips on chopping the broccoli? I'm never good at even cutting it into florets for like veggie trays. Do I use a chopper/food processor? Or just dive in with a big knife?

I've had broccoli salad at a restaurant that had the cheese, but it had raisins instead of grapes. It's one of my favorite things to get there.

Knowing the family I am making this for....I think I'll leave out raisins and grapes.

If you have a food processor, I'd recommend using it to chop the broccoli. If you try to chop it with a knife, it will fly all over the place, and you'll have broccoli all over everything.

I have my salad all made up and chilling. Even my anti-veggie hubby like it, we had to "test" it at dinner. Here is the recipe I used, with my own modifications. From allrecipes.com Cheddar Broccoli Salad INGREDIENTS * 6 cups fresh broccoli florets * 1 1/2 cups shredded Cheddar cheese * 1/3 cup chopped onion * 1 1/2 cups mayonnaise * 3/4 cup sugar * 3 tablespoons red wine vinegar or cider vinegar * 12 bacon strips, cooked and crumbled DIRECTIONS 1. In a large bowl, combine the broccoli, cheese and onion. Combine the mayonnaise, sugar and vinegar; pour over broccoli mixture and toss to coat. Refrigerate for at least 4 hours. Just before serving, stir in the bacon. My modifications * Since I was making it for a big crowd, I used 3 heads of broccoli and 1 head of cauliflower. 1/2 block of cheese. * I omitted the onion because 1) if hubbys family sees onion in anything they wont touch it (whats wrong with them huh?) and 2) the red onion I bought was all mushy inside (stupid walmart!). So I added some onion powder (that doesnt bother them at all but if they SEE onion, it makes them sick and they are 'up all night'). * I pretty much doubled the sauce, but my ingredients were about doubled. * We tested it last night (minus the bacon) so I am not 100% I'll be adding it. It didnt really need it.
