Need some culinary wisdom? Share your clever cooking tricks here. Here are some of mine:


When adding milk or cream to tomatoes, such as when making homemade tomato soup, adding a pinch of baking soda to the tomatoes first, prevents the milk or cream from curdling.


Put a Lemon in the microwave for a few seconds, and you will get twice the juice.My Aunt told me that one.



To prevent fresh garlic from sticking to your knife while chopping it, coat the knife with a drop of oil.

I never throw away the bones from pot roasts nor the carcasses from chickens or turkeys. After the meal is over and the leftover meat has been trimmed off I make stock to keep in the freezer for future use.

I'm making beef stew even as we speak (or type).

If there is leftover coffee available, I throw in about 1/4 cup of that into the pot. Sounds strange but it is good. You can also pour some over a pot roast.

If you put just a little bit of oil in the boiling water when cooking pasta, the pasta won't stick to itself. If you get something too salty, add a chunk (or a whole) potato while cooking to absorb the excess salt.

If your pasta sticks together, then your cooking vessel is too small. No matter what type of pasta or how much of it I cook, I always use my stock pot and never less than half full of water for cooking. When the water is at a full rolling boil add your pasta and stir for about 30 seconds, and it will not stick together. This way, you can avoid adding excess oil to your diet. On the other hand adding oil to your pasta water is a wonderful way to prevent boil overs.

A metal ladle in the pot will keep milk from boiling over.
Adding a little oil to melting butter raises the burning temperature of the butter.
Cracking an egg on a flat surface gives you more even halves of shell if you're separating them.
I've seen this one disputed, but the Frugal Gourmet guy always said "hot pan and cold oil" to keep things from sticking.
The color of the twist tie or plastic tag on a loaf of bread tells you what day of the week it was baked. Click here
If you're reheating pizza on a baking sheet, preheat the sheet and you're crust won't be soggy.

If out of buttermilk, I add a little lemon juice to regular milk.

I add half a cup of coffee to a pot of chili. (gives it a darker taste)

Put boiled eggs in a pot of ice water to chill before trying to peel the shell.
It will come off easier, and not pull away the white.

If a soft drink it going flat, add a bit of club soda to perk it up.

The most food for the cheapest price are the large size roaster chickens. I'm talking about the seven pound birds, not the fryers. This gives you enough food for a traditional roast chicken dinner, and then chicken tacos or whatever way you like leftover chicken. The third day you take the bones and make soup. Three meals from one cheap bird.
