What do you all serve as a meal when you have guests over for dinner?

Do you have a standard meal you make when you have someone over for the first time?

My husband and I would like to start having couples/families from church over for dinner to get to know them better, but I get so worked up as to what to make. I’d like to develop a standard menu so I can do this without fear of what to make each time. I’d also like the menu to be rather simple.

I’d love to hear your ideas and what you’ve done. Thanks!

I have found that roast beef offends no one.
I slow roast it with gravy, served with roasted new potatoes, carrots, snap beans, a salad, rolls, and desert.


I have also hosted game nights and have had a sandwich platter, chips, raw fruit and veggies, and a light desert such as cookies.


I try not to do new or exotic recipes on guests I don't know that well..I do the experimental cooking for close friends that won't desert me if they get ill.

Great ideas...well, I've never made roast beef that well. I LOVE roast beef, but I haven't learned the secret of making it well. Tips? What kind of cut do you buy?

Yum! I know how to make stuffed shells. That would work as an option! Do you make your own meatballs?

Making a beef roast is easy. Take a roast. Put it in a slow cooker with a little liquid on the bottom. Top with a packet of french onion soup mix or GW seasoning or just leave plain. Cook low for several hours till it's done in the middle. Use drippings to make gravy

I cook it overnight in a crock pot. I trim fat, put the roast in with a couple of packets of gravy mix, and half an onion, salt, and pepper and let it cook to pieces almost.
I serve it in a bowl, since it is falling apart by this time. I buy any cut but chuck roast, which is really fatty.

OR I use the roasting bags and cook it in the oven. They are wonderful, and the meat does not fall apart, but is very tender to cut. I then make gravy to serve along with it. You can get the roasting bags at the store, on the same lane as spices and seasoning. McCormick makes them.

What kind of cut of beef do you all buy? I get confused by all the different types. It's been a long time since I bought one. I've done the bags before. I can't do the crockpot for roast beef because something about that cooking process for beef bothers my husband.

London broils are good. tip roasts, any old roast.

I usually buy an eye round roast (a little chewy but great flavor) or look for a lean chuck roast

try test runs making the roast using less expensive cuts of meat..your family has no choice but to eat it
THEN, buy a nicer cut of beef to cook for your guests.

If I am having guests, and don't know what they can tolerate as far as seasonings, I just use butter, salt, and pepper. Some times a little parmesan cheese

uncabeeil - I bet your meatballs are great! I've made meatballs before and haven't used a recipe either. I was just curious if you did anything different.

bluestone, I know what you mean about not knowing what people can tolerate. We generally like things spicy, but not everyone can do spicy. If it's spicy and has tomatoes, my husband things I've made greatest meal. But, it's hard to know what other people like and can tolerate.

A couple of other things I keep in mind:

Are there older folks coming over to eat that may have trouble chewing certain foods? Any diabetics coming over?

I try to invite Older widows and such over on Sundays for lunch, since many times they are lonely, and keep these things in mind.

Lasagna works well for almost everyone.

Slightly OT, but we should all do the same with the older people in our churches and neighborhoods. We'll be serving at a soup kitchen tonight, and I hear there are many elderly people who come to eat there while donating $5, $20-- they don't need the free meal, they just want some dinner company. I find that so sad.

Anyway, I was going to suggest lasagna, too. That and salad and garlic bread are crowd-pleasers, and can be made ahead of time.

Some good things to keep in mind.

Yes, lasagne is a great idea! I like that or stuffed shells because you don't need potatoes or a veggie...just a salad and bread.

These are a couple of my favorites:

SHRIMP SCAMPI & LINGUINI

3 tbsp. butter
1/4 c. extra virgin olive oil
2 tbsp. fresh parsley, chopped
1 tbsp. fresh lemon juice
1 tbsp. dry white wine (optional)
4 cloves garlic, chopped fine
16 shrimp
1 lb. linguini
3/4 c. fresh grated Parmesan cheese

In heavy saucepan add butter, olive oil, parsley, lemon juice, white wine and garlic. Cook over low heat, uncovered for 5 minutes. Add shrimp and cover for 3 minutes until shrimp is pink in color. Mix with cooked linguini and add cheese. Toss well. Serve immediately.

Serve with Salad and Garlic Bread

This one you make the day before as it has to be refrigerated for 24 hours prior to baking:

CHICKEN TORTILLA CASSEROLE

* 2 cups cooked, boneless and skinless chicken, cut into bite-sized pieces
* 4 tablespoons chicken stock
* 9 (6 inch) corn tortillas, cut into strips
* 1 (10.75 ounce) can condensed cream of chicken soup
* 1 (10.75 ounce) can condensed cream of mushroom soup
* 1 cup milk
* 1 lg. can green chilies
* 1 onion, shredded
* 1lb. shredded Cheddar cheese

1. In a bowl, mix soups, milk, chilies, and onion.
2. Put 3 to 4 tablespoons of chicken stock in a 9 x 13 inch baking dish. Add a layer of tortilla strips, and then a layer of chicken. Pour soup mixture over chicken and tortillas. Continue to layer in this order until dish is full. Top with cheese. Cover and refrigerate for 24 hours.
3. Bake at 300 degrees F (150 degrees C) for 1 to 1 1/2 hours.

I serve this with a big Fruit or Green Salad and Tortilla Chips/Salsa/Sour Cream.

Another good option for entertaining guests is a roaster chicken. These are larger than the fryers. Look for the roaster chickens at about 6 or 7 lbs. These are big enough to stuff if you want to. Serve along with mashed potatoes, a green veggie, dessert and you're all set.

Oh, this is another casserole everyone likes:

CHICKEN DIVAN

2 (10 oz.) pkg. frozen broccoli
4 boned chicken breasts (cooked and cut in bite size pieces)
2 cans cream of chicken soup
1 c. mayonnaise
1 tsp. lemon juice
1/2-1 tsp. curry powder
1 c. shredded cheddar cheese

Cook broccoli as directed on package. Drain and arrange in 1 1/2 quart dish. Arrange chicken over broccoli. Mix next 4 ingredients and pour over top. Cover with Cheese. Bake 25 - 30 minutes at 350 degrees.

Serve with rice, salad and crusty french bread.

Kat! Your chicken tortilla casserole sounds delicious! I make something like it with flour tortillas, I am going to try your recipe next time.

Crownofbeauty-
If you have a grill, you can grill a turkey tenderloin and veggies like zuchini and sweet potatoes and you have a delicious meal with no clean up.

Or, I like anything you can make ahead and bake in the oven. Chicken and rice casserole usually goes over well and you can serve a green salad and nice bread.

The trick is to serve something that doesn't cause you to stress out in the kitchen instead of enjoying your guests.

I will make lasagna, I have found most people like that and it is easy. really just about any Italian is pretty safe.

If it is summer time we might grill something.

When I make my roast I will buy whatever is on sale and use my crock pot. I tried it last night with a can of cream of mushroom soup and french onion soup. I think it was the best I have ever made.

I bought several crockpot recipe books for such a time as this. I can put the stuff together the day before and put the crockpot on to cook early on Sunday and it's done when we arrive home. That is not the way my husband and I eat ordinarily since it is only the two of us, but it seems to make it easiest for larger groups.

But this past Sunday we invited a couple home and just threw some chicken on the grill, made a fruit salad, a spinach salad (with water chestnuts, bean sprouts & sesame seeds with a soy/olive oil dressing), and we also roasted veggies on the grill. All was made upon our arrival home from church. I had made a strawberry pie on Saturday. But I find grilling meat and veggies to be quite quick and easy.
