Basically, I store mine in a basket in a cabinet above eye level. It's worked for me until recently; I'm not supposed to be doing a lot of stretching/reaching/lifting for a while. I'm moving my most-used herbs/spices to the ledge on the range, but since I use that a lot, I wondered if it would be the best place... if maybe they'd lose their flavor quicker or something.

I may still do this, even if just temporarily, but I was wondering how everyone else kept their spices stored and even organized.

The heat from the oven will definitely have an adverse effect on your spices. Especially red ones like paprika, which have a lot of essential oils that can turn rancid. Mine are all stored in glass jars in an enclosed cabinet, with some like ground chili peppers stored in the fridge. But then again, my spices and herbs take up two full shelves of my kitchen cabinet.

Your ground chili peppers are stored in the fridge?? Do they go bad that quickly? I've never noticed a problem with mine.

I love spices, too, though mine only take up one shelf in the cabinet.

I'm actually just following a recommendation from the place I buy my spices. They're the ones that said red spices in particular should be kept refrigerated because they can spoil. To be honest, they aren't really around long enough to spoil. I don't buy large amounts because where I get them grinds everything fresh at least once a week, and fresh is always better.

From The Spice House web site:

What is the best way to store my spices?

You want to get them into some kind of air tight container. Glass jars are the ideal storage container. You can also add to the life of your spices by storing them in the refrigerator. The only problem with this is out of sight, out of mind. The worst place to keep your spices is above the stove because the heat from the oven will destroy the essential oils in the spices.

How long do spices last?

Whole spices can last three years. Once spices are ground their volatile oils have been released and they are already beginning to dissipate. We recommend not buying a larger amount of an individual spice than you expect to use within a year. Old spices will not make you sick, they just won't accomplish their true purpose. A good, simple test is to smell them. If you don't get a scent, it's time to throw them away. A fun way to throw them away is to toss them on your grill when cooking. This is a way to release the last little bit of volatile oils that might still remain, and put flavor into your grilling food!

I actually went through my spice cabinet and checked expirations dates and all that and I am sad to say that I have very few left.

Course I still have 3 cans of cream of tartar that will apparantly last until the second coming

Anyways, I was convicted of old spices (pardon the pun ayuckyuckyuck) and how the flavor turns and I suppose in some cases, they can actually give tummy aches.

I keep mine simply by emptying them in plastic containers and write out the name of the herb or spice and keep them in my kitchen cabinet.

I buy mine in small amounts from my local health store.

I keep them in airtight glass storage bottles below a shelf on my dresser (it's dark there).
