So...I was at the meat market yesterday and saw these things called London Broil. They looked good, and hubby wanted to get them. They are in the fridge, and I have no idea what's in them.

This is what they look like

I could have just asked the butcher, but I didn't want to look dumb

It looks like some ground up meat (he did say that was ground sausage) wrapped with bacon, wrapped with beef. I've looked up London Broil and most places in the US use that term to describe a certain cut of meat.

Anybody have it this way before? What would be the best way to cook it? On the bbq?

I've never seen that called London Broil. Around here it's a cut of meat that's pretty flat and a little chewy but has a good flavor. I would just grill those. THat's what we do with London Broil.

Thanks aga, I read that one already

I happen to be in Canada, so what I have is what they would call Canadian London Broil. It looks good anyway.

It is sausage with marinade in it. I also have some stuffed pork chops, with the same ground sausage inside, they look great too. I don't know which to have for supper tonight!

Funny how the differences are just a little bit away. I never would have called that London Broil.

We do get the American version when they are on sale (and they have a failry small one). It is a pretty tough cut, and has *no* fat on it at all, but it ends up being pretty good. I score it in a diamond pattern, then marinate it for a few hours in oil, vinegar, garlic, pepper and whatever else strikes me at the time. Cook it so it is medium rare and slice it thin. Yum!

You could call the butcher and ask over the phone how to cook the rolled up version. (He won't know who ou are over the phone.) But really, around here butcher *love* to answer questions, so don't feel bad about not knowing and needing help. That is what they are there for

This would explain why it's paired up with sausage. A little pork fat would keep the beef moist. The young man at my church who gives us venison does the same thing. Venison also has very little fat, so he puts some pork in with the venison when he makes sausage.

I usually marinate mine for about 2-4 hours before grilling.
