Really? My chicken breasts on the grill are always juicy and moist. Make sure they are thawed ALL the way through, then heat the grill with the lid closed until it's about 450 degrees. Season them with whatever you prefer(I'm a Canadian steak seasoning kinda girl) then toss them on and close the lid. Flip about 5-8 minutes later, wait another 5 minutes and they should be perfect.


Tonight we are having chicken breasts cooked with the above method, and a veggie salad w/o lettuce.

The secret to juicy chicken on the grill is no direct flame until the end. Also, don't pierce the meat when you flip it. Marinating ahead of time helps too.

Tempting... very tempting. But I would want the full bodied veggies, and then he'd know they're in there!

I did marinate and grill the chicken breasts. I used THIS RECIPE (more or less - I used ACV instead of balsamic, for example, and less oil, half the black pepper, and I ran out of thyme so I used some poultry seasoning). They LOOK juicy - we'll see how they are! I think I'm afraid of doing chicken breasts because other people have overcooked them to a nice, tough overdoneness.

Well, it was a hit with both of us, although next time I'll add fresh minced garlic when I saute the vegetables.

Tomorrow night it's an Independence Day cookout/potluck with friends. We're contributing kosher dogs, vegetarian baked beans, and homemade Texas Sheet Cake.

We're having family over for the 4th. We'll have hamburgers and hot dogs on the grill. Slaw, lettuce salad, 3 bean salad, potato salad, zucchini and tomatoes, and chips for side dishes. Strawberries and ice cream for dessert, and maybe a cherry pie if sil brings one.

Grilled Hebrew National hotdogs, baked beans, and potato chips or potato salad-- IOW, we're having tonight what we *thought* we were having last night, and what I'm still craving. (Went to what we thought was going to be a cookout, but they ended up having bbq beef sandwiches... which I didn't eat because it had been sitting out and was lukewarm by the time we got there. Ditto on the potato salads and macaroni salads. DH ate it and was fine, but I wasn't about to touch it. I ate the cake and beans we brought, and some Doritos. )

We had BBQ ribs, mac salad, deviled eggs, corn on the cob, and baked beans at a neighbor's home.

I haven't decided what's for tonight. We can have either flank steak or chicken breasts and a choice of bok choy, yellow squash, white potato, sweet potato, brown rice, eggplant, pinto beans, butter beans, or zucchini. I'll give dh the choice on what we eat and how it's prepared and flavored.

Last night was hotdogs, grilled chicken, baked mac and cheese, chips at my home fellowship group's picnic.

Tonight we are having hamburgers and corn on the cob and chips. Corn was on a good sale this week so I planned a meal around the corn.
