Here is the recipie. My youngest son and I did not like it but hubby and the oldest son did. Go figure .. lol..

French Toast Casserole

1 lb loaf italian bread
8 oz lowfat cream cheese
1/2 cup sugar, divided
1/2 tsp. vanilla
1/2 cup chopped pecans, optional
4 eggs
2 cups milk
1 tsp cinnamon
2 tablespoons butter, melted

Cut bread into cubes, place half into a greased 9x13 pan. Microwave the cream cheese until melted, stirring midway. Once melted, add half the sugar. Pour this mixture over the bread in pan. (will not completely cover) Sprinkle nuts over cream cheese layer. Top with remaining bread cubes. In a bowl, beat the remaining sugar, eggs, milk, cinnamon, melted butter and vanilla together. Pour over bread cubes. Freeze at this point or put in fridge overnight. Bake at 350 degrees for 35 minutes. Serve with warm syrup or fruit toppings.

We're having swiss steak tonight. The weather has been super nice here so I'm starting to think about summer-y meals...I bet this is the last time we'll have swiss steak until fall!

Last night we ate at my parents. We had pizza with sausage and mushrooms, and garlic parmesean wings, and barbeque wings. And my parents told me we are all going to Florida for Christmas and they are Paying! Whoooo Hooooo!

Tonight, I have no idea what we are having. I am a wee bit on the nauseated side, and I can't really think about food. I took lamb patties out of the freezer, but I don't feel like cooking them. Blah. What does one make when one feels so blah?

I had nachos last night instead of frozen pizza.

Tonight is either nachos, tacos, or frozen pizza.

Dustbunny, when I feel blah, I usually end up with a grilled cheese sandwich. How fun that you get to go to Florida AND the parents are paying!

I have some chicken marinating in soy sauce. So I am making chicken stir fry and fried rice.

Last night we ended up with Chili dogs, I didnt want to cook and it was church night.

I think we might have pizza.. the homemade variety.

Have any of you ever made your own pizza sauce? I don't like pizza sauce that tastes like spaghetti sauce, it has to taste different than ours normally does. I used to like a brand from Pa., but they don't sell it down here, and the 2 other brands that they do sell here I'm not fond of.

So, if you've ever made your own, what do you put in it?

When I make pizza sauce I use tomato paste rather than sauce (that is, if I'm making a red sauce). Then I put in tons of garlic and a tiny bit of sugar. We don't really go for all the extra Italian seasonings so usually just garlic will do it for us.

That's a neat idea. I might have to try that next time.

Gina, I'm glad you asked that question because I don't really like the sauces I've tried either.

I love Pizza Hut's sauce. It's kind of sweet and very thick so I'm thinking Kristin's would be similar.

My friend uses these fire roasted diced tomatoes and garlic as sauce on her homemade pizzas, and they are SO good! She puts some cheese on the crust before the sauce, which helps keep it from getting soggy.

Kristin, do you not add water or anything? Cause I'm thinking the paste is well... pasty. =) I am experimenting with some now... and I had tomato paste (really super thick) and I had tomato sauce... which the ingredients say is basically tomato paste and water... and maybe a few other ingredients. I'm not sure. I don't really know if I like what I've got going on now for pizza, but it'll be useful for something.

I did put in some garlic cloves, onion, and some oregano, and basil. I also added a little salt and a little sugar.

Last night I tried to bbq sausage burgers - dh and the kids ended up eating them - but I burnt a few and lost one to the grill - so I ate leftovers! DH normally bbq's, but he was busy building our deck. Tonight will be the same. Maybe I"ll try bbq hot dogs this time! Wish me luck!

Here's my pizza sauce recipe:

1 12 oz can of diced tomatoes: I run this through the food processor to puree
1 6 oz (?) can of tomatoe sauce
1 clove of garlic (Just throw it in with the tomatoes in the food processor)
a shake or two of oregano.
A shake or two of basil
A few fenel seeds crushed
a dash or two of hot sauce.
