Zippy, that sounds interesting! Would it be possible to get the recipe from you, please?

fun name, btw -

I'm very picky when I go to potlucks. I don't eat a lot of what is brought because I simply do not know what ingredients are being used.

I have just found out I adore fennel and would love the recipe too if you could post it please

I read every label carefully and I rarely buy any processed foods. If the ingredients in something are not "real food" then forget it. I NEVER buy anything that has hydrogenated oils, high fructose corn syrup, or MSG.

You have to read the labels and be careful with what you eat. Especially what the family eats, for you are what you eat!

I had fennel once and it was made like a salsa over fresh grilled salmon. Very flavorful and it has like a licorice kind of taste.

Here's that recipe: Artichoke, Fennel, and Tomato Salad Note that the recipe makes 10 servings. I halved the recipe and served it with a chicken cutlet for my lunch- all week long. I would recommend quartering it if you are just making it for yourself until you can see the volume it makes and know for sure that you like it. I really like it, but it didn't go over well at a luncheon. I'll make it for me again.

One of the frustrating things for me is that a lot of the "health-food" brands of packaged foods contain soy in some form or another.

I don't do soy; so that eliminates a vast majority of even "healthy" packaged foods.

Yup. Something like 87% of US foods have some sort of soy in them. DD has a soy allergy so we are becoming vigilant about checking.

We have eliminated most of the HFCS foods, Hydrogenated fats, MSG(dehydrates me) and we don't do any artificial sweeteners except for Whey Low.

I also watch for carb/fiber ratio and protein content.

No gluten, no peanuts and no soy lecithin makes for a pretty skinny diet as far as packaged foods go.

We tend to make a lot of things ourselves from raw ingredients.

I even check labels on our regular purchases now after getting caught out a couple of times with changes in ingredients.

Thank you ~ it sounds yum (except for the olives ). I shall have to try it soon...

Kylie, does your son react to the soy lecithin specifically?

It will be fine without the Olives or with the less tasty black olives, if you like them. You could probably sub any veggie (what about hearts of palm?) for them so you don't end up with too much dressing.

Ryanne, anytime we have stuff with it in he gets a migraine so I've just stopped buying it. I really don't know if it's the soy lecithin or something in it. I just know we get a reaction so it's just easier to not buy stuff with it in it.
