I am convinced the IWFNE made his strong declaration about hating cheese cake after trying one made with the Jello brand mixes. When he tried a REAL cheese cake, he loved it; however, pride has kept him from admitting it because of the strong declaration he made before ever tasting a real cheesecake. The conflicting evidence is a result of his dreaming about cheese cake and momentarily forgetting that he is supposed to hate it. The existence and popularity of this thread is simply an acknowledgment that everyone has successfully read between the lines. [:D]

My kids and I make Pumpkin cheesecake every year using our secret family recipe; it is made entirely from scratch beginning with fresh pumpkins.

One secret to making really good pumpkin cheesecake is getting the moisture out of the pumpkin before adding it to the cream cheese; this is important even when using canned pumpkin. The best way I have found is to spread the pumpkin out on a couple of layers of paper towels; you can remove the pumpkin from the paper towels simply by folding it in half a couple of times and slowly pealing the the top half of the paper towel away from the pumpkin. I usually have to repeat this a couple if times with new paper towels before I have enough of the water content removed. You know when you are good when the towels are no longer sopping wet. This little trick makes a very big difference in the consistency of the cheesecake.

Another trick is to separate the eggs and beat the egg whites into firm peaks, and then fold in the egg whites as the last step after everything else is mixed well (and just before putting everything in the oven); This will result in a lighter more "airy" cheese cake while still maintaining that "sinfully" rich flavor.
