Memaw. -> 1001 Ground Beef Dinner Ideas (4/29/2008 1:21:26 PM)

I am tired of the same old recipes for ground beef, so I thought you all could help me out.[:)]

What are your favorites?

peculiar_lady2 -> RE: 1001 Ground Beef Dinner Ideas (4/29/2008 1:31:59 PM)

do you want us to number them for you so that you can keep track of how many we can post?

firefightermama -> RE: 1001 Ground Beef Dinner Ideas (4/29/2008 1:38:20 PM)

1.this is one of my favs

It's a great chili recipe too

2.I also make homemade mac and cheese and add mixed veggies and cooked ground beef.

Mrs.X -> RE: 1001 Ground Beef Dinner Ideas (4/29/2008 1:50:33 PM)

3. Meatloaf

1lb. of ground beef
1/4 cup your fav breadcrumbs
1/4 cup of diced onion and garlic
1 egg
maybe 1 cup of your own spaghetti sauce

Mix all the stuff except spaghetti sauce and make it into a loaf. Bake at 350 for 40ish minutes, then drain the grease, then put your sauce over the loaf and bake for another 15ish minutes.

Sarah,
Yes, that sounds like a good idea.[:)]

Yolanda,
That chili fries recipe sounds very good.
I have done the mac/cheese with veggies and hamburger too. I add tomato sauce to the beef/veggie mixture.

Memaw. -> RE: 1001 Ground Beef Dinner Ideas (4/29/2008 1:52:13 PM)

Christina,
I've never put spaghetti sauce on meatloaf before, that sounds yummy.

Mrs.X -> RE: 1001 Ground Beef Dinner Ideas (4/29/2008 1:55:15 PM)

Yeah I like it so much better than cream of mushroom or BBQ sauce or ketchup.

Georgia-Peach -> RE: 1001 Ground Beef Dinner Ideas (4/29/2008 2:18:38 PM)

I haven't tried this recipe yet, but I will be soon. My friend told me about it, it is one her and her husband love.

Taco Stuffed Shells

Memaw. -> RE: 1001 Ground Beef Dinner Ideas (4/29/2008 2:25:01 PM)

Chelle,
That one is real similar to THIS ONE that my family loves.
Thanks!

5. Stuffed Bell Peppers

I usually use leftovers from a spaghetti night and a brown rice on the side night. I don't measure any quantities. I just mix it to the appropriate consistancy and go for it.

Ground Beef
Brown Rice
Spaghetti Sauce
Bell Peppers
Cheese of choice (optional)

Brown ground beef and cook rice per package directions.

Preheat oven (about 400.) Cut tops off peppers and clean out seeds and membranes. Place in a corningware dish in 1" of water and microwave about 5-10 minutes (5 for 2 peppers and 10 for 4-5 peppers.)

Mix together sauce, rice, beef, and cheese and stuff peppers (dump any interior water out) with mixture and place back in the corningware dish with the water.

Bake uncovered (about 30 minutes- since everything is done it just needs to heat thoroughly)

The cheese you use really changes the flavor. If I want an italian flavor, I use moz, parm, or no cheese. If I want a cheese burgery flavor, I use sharp cheddar.

6. Beef Stroganoff My grandmother never used a nice cut of meat for hers. Hers was always ground beef!

Memaw. -> RE: 1001 Ground Beef Dinner Ideas (4/29/2008 2:32:17 PM)

Wow, y'all are coming up with some good ones!

I'm going to get my recipe cards out and start writing these down.[:)]

Shepherd's Pie

1 lb ground beef
Chopped onion (to taste)
1 can cream of mushroom soup
1 can cream of celery soup
1 can of your favorite veggies - do not drain
1 can of (chopped) stewed tomatoes - do not drain
Salt* and pepper to taste
Leftover mashed potatoes or instant mashed potatoes. (Enough to generously cover top).

Preheat oven to 350-400. Spray casserole pan. Brown ground beef and onion. Mix all ingredients, except mashed potatoes together. Spread evenly over bottom of casserole pan. Cover mixture evenly with a generous topping of mashed potatoes. Bake for approx. 1 hour.

*I use garlic instead of salt because I'm on a low-sodium diet.

firefightermama -> RE: 1001 Ground Beef Dinner Ideas (4/29/2008 4:41:16 PM)

Kimmie, our meatloaf has tomato soup in it, and then there's a sauce with tomato soup, water, brown sugar, mustard that you cook it in, it's good too.

I've never tried the pasta sauce with it before

DenimDiva -> RE: 1001 Ground Beef Dinner Ideas (4/29/2008 4:52:28 PM)

Cheeseburger Casserole

1 lb ground beef
Lg. can of baked beans
Chopped onion, ketchup, mustard, BBQ sauce to taste
About 8 slices of cheese
Can of biscuits

Preheat oven to whatever temp is recommended for the biscuit's. Spray casserole dish. Place biscuits along bottom of dish, pinching together. Brown ground beef and onion together and rinse. Mix together remaining ingredients, except the cheese and pour over biscuits. Bake for about 15-20 minutes. Place cheese slices on top and cook another 3-5 minutes. biscuits should be done, but gooey and cheese should be melted.

A kid pleaser!
And it's quick and easy!

my mom used to make her version of a "hamburger helper" meal.....ground hamburger meat, noodles (she used elbow macaroni noodles, I use whatever I have), and a large can of tomato soup. (and some salt, pepper and garlic powder to taste)

I was going to suggest sloppy joes, but I can't find my recipe! It takes about 2+ hours to fix from scratch and avoid unhealthy ingredients (such as most bottled BBQ sauces or ketsups that have HFCS,) but is well worth it b/c you can make a huge batch and freeze it into smaller portions for your family. It doesn't take long to thaw it and reheat for an effortless dinner, so the 2 hours is a good investment of time. There are loads of recipes online with differing ingredients & shorter cook times if you wanted to search and find a recipe you are comfy trying... and I'll keep my eye out for my recipe.

when you find it I want a copy of that please....the no HFCS is a biggie for us!!!

HisCovenant -> RE: 1001 Ground Beef Dinner Ideas (4/29/2008 5:48:17 PM)

Sure thing! I am supposed to menu plan soon, so maybe I will come across it then.

Memaw. -> RE: 1001 Ground Beef Dinner Ideas (4/29/2008 5:52:58 PM)

That sounds good, I remember a recipe my Mom made that had "sloppy joe" under cornbread, but I have never made it, does anyone know of that one?

HisCovenant -> RE: 1001 Ground Beef Dinner Ideas (4/29/2008 6:15:04 PM)

I found the Sloppy Joe Recipe!! It does have Ketchup in it (which I'd forgotten,) but there are some more healthy versions that don't have HFCS or you can make it yourself.

I guess that depends on what side of the pond you're on. [;)]

Us folks on the poor side of the pond can't afford lamb. [:D]
