So, what do you use your ripe bananas for other than muffins and bread? I always seem to have 2-3 bananas that are well ripened and I always make banana muffins. They are really good, but I am looking for some more creative ways to use them to change things up. Oh and how do you properly freeze bananas for later use?

Banana smoothies or banana milk

Peel the banana, cut in half and put it in a freezer bag. Not sure what happens when it's thawed though. Mine go right into the blender frozen.

I typically chop up a banana; throw it in the blender, add a few strawberries, milk, and some Whey protein.

Chelle, I always freeze my bananas right in the skins, or mash them up and freeze them in ice cube trays or in small containers.

I don't know any other recipes for ripe bananas. I have a great recipe for banana split cake, but it uses regular ripe bananas, not overripe ones.

peel it, wrap it in plastic wrap or put it in a bag or bowl, and freeze.

you can also do banana chips

I already eat peanut butter and banana sandwiches, but I can't stand to eat a overly mushy banana...gross! Well I peeled them and put them in a freezer bag. I didn't have any plastic wrap, but I am sure they won't stay in the freezer long. I am really trying hard to not be wasteful and throwing away 3 bananas is being wasteful when they can be used in something.

I like sliced frozen bananas. To me it tastes like ice cream. Yum!

Steamed vegetables with a banana for dessert and sugar free Mexican hot cocoa makes a perfect late supper.

I just found this recipe and I haven't actually tried it yet but we will be making it this weekend sometime. Hubby and I are somewhat adventurous when it comes to cooking and if it sounds weird we will try it.

Islander Fish Filets


1 LB orange roughy or other mild whitefish
1/2 C plain nonfat yogurt
2 Tblsp frozen orange juice concentrate
1 Tblsp lemon juice
2 tsp. fruit juice sweetened orange marmalade
1/3 C mashed banana
1/8 tsp garlic powder
1/2 tsp ground ginger
pinch white pepper


Preheat oven to 400 degrees. Cut filets into 4 serving size pieces. Place side by side in baking pan big enough to hold fish in a single layer. Combine the rest of the ingredients. pour 1/2 cup of the mixture evenly over fish. bake 5-15 minutes at 400 degrees or until fish flakes. serve with remaining sauce.

I will let you know how we like it. It also is healthy with 135 calories and 1 gram of fat per serving.

We made this today for lunch and it was yummy. I also had a recipe for hawaiian rice that I served with it. I highly recommend it.
