[;)] Green Tomato Pickles 9 c vinegar 3 c sugar 5 lb tomatoes cut in 1/2 inch wide slices 10 med size onions cut 1/2 inch wide slices 10 tsp celery seeds 5 tsp mustard seeds 5 tsp dill seeds 10 peppercorns 5 cloves garlic In an enamel or stainless steel pot, bring vinegar and sugar to a boil. Meanwhile layer tomatoes and onions in 5 hot, scalded quart jars. To each jar add 2 tsp celery seeds, 1 tsp mustard seeds, 1 tsp dill seeds, 2 peppercorns, and 1 clove garlic. Pour boiling vinegar mixture into jars, allowing 1/4 inch headspace. Seal, then turn jars once to disperse spices. Process in a boiling-water bath for 15 minutes. Makes 5 quarts. 10/07 Made 7 qts. 10 onions was way too many for 7 quarts. Used about 7, if that. Made an additional 1 c sugar / 3 c vinegar for 7 qts with some left over. Next time: use 3.5 c sugar, 10.5 c vinegar and see how that works.
