I LOVE to entertain, and my favorite meal to serve guests is Cheese Stuffed Chicken Breasts with Tea Room Spinach Salad, roasted fresh vegetables and maybe some herbed brown basmati rice. If it's a crowd, I'll make a giant pot of chili or soup (especially if it's fall/winter) or maybe an assemble-yourself-taco-salad type of a thing. This time of year when the farmers' market offers so many fresh vegetable choices, it's easy to come up with a great meal.

I agree that most anything Italian will do just fine, but don't forget to pick up a few extra antacids just to be on the safe side. You never know who has acid reflux (amongst other ailments like bluestone mentioned)

I usually ask ahead if my guests have any dietary restrictions (Italian is tricky if they're gluten sensitive or on a grain free diet) or intense food dislikes. That always gives me a place to start.

Another dinner idea is a breakfast supper. Sort of a nightime brunch. breakfast casserole, some breakfast meats, waffles or pancakes, fresh fruit, etc.
